My kids prefer to each eat a flavored packet of oatmeal every day for breakfast, and they don't like it when I make real oatmeal and try to flavor it. For cheapness' sake, however, we keep trying. Today I tried a recipe for baked oatmeal with fruit, and they went nuts! It was delicious, healthy, and very easy.
Combine 2 cups oats, 3 tablespoons brown sugar, 4 cups skim milk, 1 cup applesauce, and 1/2 teaspoon almond extract with whatever fruit you feel like throwing in (I used raisins, dried cranberries and cherries, and one fresh chopped apple). Pour into a 9x13 pan coated in cooking spray and bake at 350 degrees for 45-60 minutes. Easy! I think we'll be making this often.
