Surprisingly Delicious Celery Soup

Several of my friends have asked for my latest recipe experiment: celery soup. The general consensus was that we loved it and thought it tasted very gourmet and rich; most of us agreed that our husbands wouldn't be fans!

Ingredients: 1 stick butter, 2 bunches celery stalks and leaves (cut into 1 inch pieces), 5 cups chicken stock, 3/4 cup chopped walnuts, 1 cup half-and half (or 1/2 cup heavy cream)

Directions: Melt butter in large saucepan. Cook celery in bubble 20 minutes until soft but not browned. Add stock and simmer 20 minutes. Add walnuts and cook 5 minutes. Transfer soup to blender and blend carefully in small batches until smooth. Stir in cream and re-heat before serving.
